Ingredients

  • 1 Boneless pork loin, 3-4 lbs, trimmed and tied
  • Kosher salt
  • 100 g Whole grain Dijon mustard
  • 100 g Smooth Dijon mustard
  • 100 g Honey
  • 10 g Dark Molasses
  • 4 g Fresh cracked black pepper

Directions

  • Set the oven to 400°F. Place the pork loin on a sheet tray or large plate and season generously with kosher salt. Allow it to temper for 1-2 hours.
  • Meanwhile, add the remaining ingredients to a medium mixing bowl and whisk until thoroughly combined.
  • When ready to cook, rub about 1/2 of the glaze on the pork loin and place it in the oven.
  • Roast for 20 minutes, then remove and cover with the remaining glaze.
  • Continue cooking until the pork is done to your liking; 135°F is a nice medium (the meat will continue to cook when you remove it from the oven), but I wouldn’t recommend going past 145°F. Begin checking the temperature when the pork has roasted for 40 minutes, and go from there.
  • Remove from the oven and allow to rest, loosely covered with aluminum foil, for at least 15 minutes.
