Honey Mustard Glazed Pork Loin

Ingredients
- 1 Boneless pork loin, 3-4 lbs, trimmed and tied
- Kosher salt
- 100 g Whole grain Dijon mustard
- 100 g Smooth Dijon mustard
- 100 g Honey
- 10 g Dark Molasses
- 4 g Fresh cracked black pepper
Directions
- Set the oven to 400°F. Place the pork loin on a sheet tray or large plate and season generously with kosher salt. Allow it to temper for 1-2 hours.
- Meanwhile, add the remaining ingredients to a medium mixing bowl and whisk until thoroughly combined.
- When ready to cook, rub about 1/2 of the glaze on the pork loin and place it in the oven.
- Roast for 20 minutes, then remove and cover with the remaining glaze.
- Continue cooking until the pork is done to your liking; 135°F is a nice medium (the meat will continue to cook when you remove it from the oven), but I wouldn’t recommend going past 145°F. Begin checking the temperature when the pork has roasted for 40 minutes, and go from there.
- Remove from the oven and allow to rest, loosely covered with aluminum foil, for at least 15 minutes.
- Slice and serve with your favorite sides
