Pear Mostarda

Ingredients

1 lb Fresh pears, peeled, diced

4 oz Sugar

2 oz Champagne vinegar

2 oz Water

1 oz Smooth Dijon Mustard

½ oz Whole Grain Dijon Mustard

1 Tablespoon Yellow Mustard Seeds

½ teaspoon Red Chili Flake

2.5 oz Kosher Salt

Directions

Set a large, preferably non-stick pan over medium-high heat. Add pears and sauté until deeply caramelized. Add remaining ingredients and lower heat to medium-low and continue to cook until most of the liquid has cooked out and the pears are tender. Transfer to a container and allow to cool. Cover and refrigerate. Will keep in the refrigerator up to 2 weeks but can be easily packed into ball jars and heat processed to preserve longer.
