Ingredients

½ cup Giardiniera, drained, liquid reserved (Homemade is best, but Marconi brand is my favorite store-bought)

¼ cup Red wine vinegar

1 Tablespoon Chives, Minced

1 Tablespoon Parsley, Chopped

1 Tablespoon Dill, Chopped

2 tablespoons Extra Virgin Olive Oil

Salt & Pepper to taste

Directions

Finely chop giardiniera and combine with all remaining ingredients and reserved liquid. Cover and store in the refrigerator for 4-8 hours before serving alongside freshly shucked oysters.
