Harissa-Spiced Lamb Rack
Great for Main Course
Ingredients
1 rack of lamb, frenched, about 2 lbs.
2 Tbsp harissa paste
2 Tbsp olive oil
2 Tbsp fresh chopped herbs (parsley, dill, chives, etc.)
Kosher salt & fresh ground black pepper to taste
Directions
Set oven to 475ºF
In a small bowl, combine harissa paste, olive oil, and herbs
Set a roasting rack over a sheet tray and season the lamb rack generously with salt and pepper
Rub the harissa mixture all over the lamb, ensuring an even coating
Place lamb rack on roasting rack sheet tray setup and place in the oven
Cook until a probe thermometer inserted into the center of the cut reaches desired temperature, 120ºF for medium-rare
Remove from over, tent with aluminum foil, and allow to rest for 10-20 minutes
Carve the rack between each bone, or double bone if you prefer
Serve immediately.
