6 oz Vinegar

2 oz Shallot, minced

1 tsp Kosher salt

1 1/2 tsp Black Pepper, coarse ground

1/2 tsp Korean Chili Flakes (Gochugaru)

2 T Chives, freshly minced

Extra Virgin Olive Oil, to finish

Directions

In a small mixing bowl, combine the vinegar, shallots, salt, pepper, and chili flakes, stirring to combine. Cover and refrigerate at least 2 hours. When ready to serve, transfer to a serving dish alongside freshly shucked oysters, top with fresh chives and a moderate drizzle of olive oil.
